Hi, trying to get back on the straight and narrower!
If you stew rhubarb, then add sugar free jelly power (Raspberry) - it makes a bulky pudding with very few calories. The sweetness of the jelly countermands the tartness of the rhubarb. I find it a really useful, sunstantial thing to grab from the fridge, when I'm ravenous. - nice with natural yogurt, ice-cream or cream too.
Not much culinary skill reqired, either!
